"Pinkman: Log-a’-Loistreáin = Hollow of the burnt corn Loistreán, a form of loiscreán, is a term applied to corn burnt off the ear, instead of being threshed. Arán loiscráin, bread made of oatmeal, the oats of which had been singed. Corn, before being ground, had to be dried – usually in a kiln, but a more primitive way, and one that survived, in some places up to comparatively recent times, was that of burning or roasting the corn in the ear. A woman, sitting beside a fire, took a handful of unthreshed corn in her left hand and a short stick in here right. She then set fire to the ears of the corn and, watching the exact moment, when the outer husk or chaff was burned but before the fire reached the grain, she struck off the burning top with her stick. Usually this was done with a considerable amount of skill for from practice they became pretty perfect in the art. Corn burned off and dried in this manner was called loiscreán – loisce to burn.
